summer lunch: swiss cashew tossed salad

I’ve been meaning to share one of my favorite summer lunches with you, I have had it more times than I care to admit, but it is easy to put together, and easy to keep on hand. My life feels a lot busier with three kids and by the time I remember to make lunch for myself I need something quick, and yummy!

I make a double batch of the dressing and then keep it in my fridge. It will separate but just shake it up before using and you’re good to go.

Poppyseed Dressing:

1/3 Cup White Vinegar
3/4 Cup Sugar
2 Teaspoons Mustard
Dash of Salt
1 Cup Vegetable or Olive Oil (I use vegetable)
1 Teaspoon Poppy Seeds

In a blender, combine the vinegar, sugar, mustard onion, and salt; cover and process until well blended. While processing, gradually add oil in a steady stream. Stir in poppy seeds.

To make the salad I buy romaine lettuce, cashews, rotisserie chicken (you can use any chicken, grilled is yummy too!), and swiss cheese. I like to cut up the swiss cheese and rotisserie chicken in advance and keep it in a ziplock in the fridge so it is all ready to go for lunches!

Since everything is already prepped I just cut up some lettuce, add cashews, swiss cheese, chicken, and the poppyseed dressing. It is filling and soo dang good!
